"Spelt
in Red Beans Soups
"
s We boil the spelt with a little branch of sage, rosemary and some cloves of garlic and salt. Separately we cook red beans "Scritti" or "Borlotti". we brown onions in the meantime with garlic, rosemary and some slices of fat or bacon and a spoon of tomato salce. We nash beans and we join them with spelt and browned onions. We boil all together .
"Fusilli over door of garden"
Fusillo is a kind of fresh home-made pasta twined as a spiral. We season it with fresh tomato sauce with garlic and fresh crillis at the end of cooking we jion a mixture of minced aromatic herbs (Basil, Erba Cipollina, Origan, Marjoran, Thyme, Parsley, and……)

"Pappardelle (Kind of Pasta) with duck"
Pappardelle are large noodles made with eggs and flour and levelled as thin sheet of pastry. We season with souce obtained cooking a duck with nek, head and giblets with minced onion, carrot and celery. we join toghether mush rooms and mashed tomato or tomato sauce, we mince meat. We cook it long and then we put it on pappardelle underdone.
