"Fat of Colonnata"
It has spiced and sweet taste: it is the fat of pig's tummy, the whitest piece that it seasons in marble basin and it is strewn with salt, pepper, rosenary and other secret spieces. It is prouducer in "Colonnata", a small town situated near marble guarries of the Apuanian mountains

"Tuscan Panzanella"
The Panzanella is one of the most typical dish of tuscan rustic cooking, so called "poor" cooking becouse it is made by simple ingredients : Kitchen garden's products and home made bread. The home-made bread is steeped in water and in vinegrade. then it is squeezed and mixed with a salad, composed by tomatoes, cucumbers, red onion and a lot of basilic and it is dressed with extra virgin olive oil.

"Small Pieces
of Toast"

They are small slice of roasted bread on which we place varied sauces. The typical tuscan sauce is made with chicken uvers and capers. It is very good also the mushroom sauce.The most modern sauce is inspired by a neapolitan recise, with tomato and mozzarella (Kind of Italian cheese originally made from cow - buffalo's milk)
